Makhana Healthy Kheer

Makhana (foxnut) kheer is a light, nutritious, and delicious Indian dessert perfect for festive occasions or as a wholesome treat.


Ingredients 

  • Makhana (Foxnuts): 1 cup

  • Milk: 4 cups (preferably low-fat or almond milk for a healthier version)

  • Ghee: 1 tsp

  • Sugar or Jaggery: 2-3 tbsp (adjust to taste)

  • Cardamom Powder: ½ tsp

  • Chopped Dry Fruits: Almonds, Cashews, and Pistachios (2 tbsp)

  • Raisins: 1 tbsp

  • Saffron Strands: A pinch (optional)


Instructions:

  • Roast the Makhana:

    • Heat ghee in a pan and roast the makhana on low flame until they turn crispy.

    • Crush half the roasted makhana into coarse pieces for texture, leaving the rest whole.

  • Prepare the Milk:

    • In a separate heavy-bottomed pan, boil the milk. Let it simmer on low heat for 10-15 minutes until it thickens slightly.

  • Combine Makhana and Milk:

    • Add the roasted makhana (whole and crushed) to the milk.

    • Stir and cook for 7-10 minutes until the makhana softens and absorbs the milk’s flavor.

  • Add Sweetener and Flavor:

    • Mix in sugar or jaggery (if using jaggery, let the kheer cool slightly before adding it to prevent curdling).

    • Add cardamom powder and saffron strands (if using) for enhanced aroma and taste.

  • Garnish:

    • Stir in the dry fruits and raisins.

    • Cook for another 2-3 minutes and turn off the heat.

  • Serve:

    • Serve warm or chilled as per preference.
